Еdible Containers for April Daring Cooks Challenge

Renata of Testado, Provado & Aprovado! was our Daring Cooks’ April 2011 hostess. Renata challenged us to think “outside the plate” and create our own edible containers! Prizes are being awarded to the most creative edible container and filling, so vote on your favorite from April 17th to May 16th at www.thedaringkitchen.com!

As Renata had given us the ultimate freedom to invent, play and have fun, I decided to go outside the directions given and make something unusual even for myself. And this way I invented the recipe that now I'm gonna share with you - Baked tomatoes, stuffed with white beans Balkan Style :-)

First of all you need to prepare the filling - boil the beans up to tree times changing the water every time. Then pour in clean water, add some cut onions and carrots, some clove of garlic, a piece or two of dried red pepper and cook until the beans are tender. Then add green aromatic herbs - mint, savory, thyme, bay leaf, some salt and some olive oil.

Now you can prepare the tomatoes - cut the tops, and scrape out the interior part. You can cut it and add it to the cooked beans. Now fill the tomatoes with beans, put in a baking tray, pour some olive oil on top and bake for about 20-25 minutes, or until the tomatoes look done. It's easy and tasty vegetarian dish, and you can prepare it a day in advance, and it's good hot and cold.

  3. I love stuffed tomatoes and use beans instead of eggs or bread crumbs as I usually do it's a great idea...I love the composition, your pics are always so beautiful...I took a picture of my easter stuffed tomatoes and they are so fake and odd, yours so beautiful...
